Andy’s Lime Cordial
Ingredients
2 quarts white sugar
3 quarts water
Zest from 8 limes
1 cup lime juice
1. Place the sugar and water in a saucepan and start to bring almost to a simmer while you zest limes.
2. Add the zest to the pan before simmering starts, and once simmering, simmer for 10 minutes.
3. Add 1 cup lime juice, and simmer for five more minutes.
4. Remove from heat, let cool, strain, and store.
