Fuji Bakery
This French-meets-Japanese bakery opened in the International District last year.

There are people in this world who love sweet baked goods, and there are people who get more excited about savory tastes. Both types unfailingly rave after a visit to Fuji Bakery. This French-meets-Japanese bakery opened in the International District last year (the bakery has been in Bellevue since 2009).
Owner Akihiro Nakamura found pastry chef Takahito Hirai, 27, in Tokyo—quite a find considering Hirai honed his pastry skills at Tokyo’s Château Restaurant Joël Robuchon, which has three Michelin stars.
Fuji’s delights include a curry-filled bun coated in panko bread crumbs ($3), cube-shaped brioche filled with wild salmon ($2), delicate “cookie bread” flavored with lemon and vanilla ($2), chocolate brioche ($1.35) and a milk stick ($1.50) that looks like a breadstick, until you bite in and discover it’s filled with house-made vanilla cream.
