Pastry chef Mi Kim has tapped into the pleasure center of our collective psyche with her take on a basic breakfast sweet: the humble doughnut.

Although in her hands, these raised rings are anything but humble. Kim launched her Raised Doughnuts  pop-up shop last year, based on her lifelong love affair with doughnuts and 10 years as a baker at Macrina. Her colorful yeast-raised creations ($2.50–$3.50) come in imaginative flavors, from mochi matcha to grapefruit crème brûlee, and are so subtly sweet and light, you can eat two (or even three) without regretting it immediately.

They’ve also earned more fans than she can keep up with. Look for a permanent space where she’ll sell her excellent sweets in the Central District soon.

From 10 a.m. until doughnuts sell out, March 10 at Eastern Cafe: Chinatown–International District, 510 Maynard Ave. S; 206.623.1776. Additional pop-up dates and locations vary.
