After more than a decade of serving up Neapolitan-style pizzas in its Beacon Hill niche, Bar del Corso has become a mainstay, not just for the neighborhood, but for the city at large. (In July 2025, the New York Times named the joint one of the top 25 restaurants in Seattle.) Opened by chef Jerry Corso and his wife, Gina Tolentino Corso, who spent time traveling through Italy learning about its cuisine, Bar del Corso is consistent in its pizza production: pies are cooked in a blue-tiled, wood-fired oven imported from Italy. Pizzas come out thin, airy, and flame-blistered, topped with straightforward ingredients like sweet cherry tomatoes, creamy mozzarella, and earthy mushrooms. If you’re not a crust person, Bar del Corso might convert you. The soft, chewy goodness is the perfect vehicle for soaking up extra sauce or dipping in olive oil.
