Opened by the man responsible for Seattle’s very first sushi bar, Sushi Kashiba puts Edomae-style fare on full display. Tucked away in the courtyard of the Inn at the Market, this destination dining is headed up by Shiro Kashiba, who notably apprenticed under Jiro Ono (of Jiro Dreams of Sushi fame) in Japan. With a focus on locally sourced seafood and a renowned nigiri-forward omakase experience, Sushi Kashiba transforms food into an art form, using minimal adornment to enhance the natural flavor of the fish. Yes, you can order from the menu (both sushi and hot dishes), but the best bet is a set dinner that allows chef Kashiba and his talented staff to work their magic. If you’re lucky enough to snag a seat at the Chef’s Counter, you’re likely to see the legend himself preparing the fish.
