Spring On A Platter
When springtime doesn’t show up soon enough (at least on the plate),
I seek out the bright jewel tones and earthy sweetness of the roasted beet salad at 35th Street Bistro (Fremont, 709 N 35th St. 206.547.9850 35bistro.com). Young arugula makes a soft bed for the roasted beauties—rotating selections include sunny goldens, raspberry-hued Chioggias and maroon Detroit reds—which are served fork tender and dressed in a brilliant sherry vinaigrette with the unexpected rye punctuation of caraway seeds. I like to sneak in for the salad at lunchtime, when the light pours through the bistro’s wall of windows, making me feel as if I’m a character in a gauzy romantic film. Maybe set in Paris, in the spring.
