Addo Finds Permanent Home in Ballard

The ambitious pop-up is promising a "food hub" takeover of the Royal Drummer space

I’m still not convinced chef Eric Rivera sleeps at night.

In May, we profiled his (overly?) ambitious project Addo—part pop-up for his own inspired cooking, part incubator for local chefs trying to launch new food businesses (Algerian fried chicken, Eastern European delicacies, etc.). It’s a difficult thing to explain, let alone keep track of, since it’s got approximately 789 moving parts.

But as of next Wednesday, June 13, Addo’s incubator arm will have a permanent Ballard home, taking over the Royal Drummer space they’ve been using for pop-ups. Rivera says that Royal Drummer will stay on to manage the coffee options, but that he and his team will handle all the food—at first, that means just breakfast, lunch and happy hour, but starting next month, they’ll be adding brunch and dinner, and continuing to do the incubator projects they’ve become known for.

In fact, he says the space will be super collaborative, a “food hub where ideas, dishes and experiences thrive.” To that end, he’s planning to keep Royal Drummer’s kiddie storytime—but featuring “stories about food and cool food things so kids can get excited about cooking.” Rivera is also planning a cookbook library.

The Capitol Hill (former Crush) space that he originally started running his ticketed elaborate dinners out of will continue to host events in a pop-up capacity, there are events planned at Ashley Rodriguez’s (of Not Without Salt) Phinney event space and a Queen Anne location in the works as well. He’s going to be hitting the road after August with Silva, his most ambitious tasting menu that he’s been doing weekly out of the Capitol Hill spot, to tour around the state—dates and locations will be added online soon. Oh, and his Puerto Rican Lechoncito, which he hopes to find its own permanent home soon, is now offering delivery via Caviar on Wednesday and Sunday nights.

Is your head spinning yet? Sign up for Rivera’s newsletter for updates, or simply check back to book tickets to incubator pop-up events online.

The Belltown staple still feeds the city after 10 p.m.

After the last tickets come off the rail, floor mats are hauled out to be hosed down, oven hoods are scrubbed, aprons come untied, and someone counts the drawer. It’s a familiar ritual in restaurant cities everywhere. When the shift ends, cooks and servers go looking for a drink and something to eat. For three…

In her new cookbook, Seattle author and dietitian Rachael DeVaux keeps healthy eating grounded in real life.

Rachael DeVaux is not afraid of beef. That might sound obvious, but in a wellness culture still haunted by plain chicken breast and low-fat everything, her enthusiasm for grass-fed ground beef feels almost radical. The Seattle-based New York Times bestselling author, personal trainer, and founder of Rachael’s Good Eats has built a following of more than 3.5…

Monday nights are worth celebrating—you made it through the first day of the week, so why not treat yourself to a delicious meal? Unfortunately, but understandably, plenty of restaurants are closed. But at these spots, not only are the kitchens still serving, the quality doesn’t drop off post-weekend, providing a perfect opportunity for a surprise…

Good spirits.

Over the summer, Westland Distillery announced a new offering, inspired by Washington State. Made in Seattle and taking cues from the Northwest outdoor lifestyle, Watchspot Whiskey blends eight-year-old Westland American Single Malt with grain whiskey from America’s heartland, resulting in a pour that has notes of toasted grain, milk chocolate, biscuit, apricot, and cherry pie….
