From tiki drinks to plant-based burgers, here are the hot openings and events this month

This is the time of year Seattleites live for in the heart of winter: perfect for patio happy hours and block parties and general revelry. Live July to its fullest with these openings and special food events:

Get out your finest floral kaftan.

Remember last summer went people went bananas for Canlis’ parking pop-ups from the likes of Shake Shack and Milk Bar? Well, this year the team is seemingly trying to outdo themselves (a very Canlis concept) with a summer-long series of Hawaiian-themed pool parties on Fridays (6-11 p.m.) and Saturdays (2–11 p.m.) through August. You read that right: there’s going to be a pool (and tiki drinks, and pizza) in the parking lot at Canlis. No reservations are required, which means lines will likely be long, especially for the first few, starting July 12. But if you didn’t get the opportunity to join their over-the-top New Year’s bash, this may be the next best thing.

Drink and dine at a cool new spot.  

Life on Mars, named after the popular David Bowie song, is one of Capitol Hill’s hottest new openings, and not just because it’s a bar inspired by Ziggy Stardust. The founders are a star-powered collaboration of local music lovers—including KEXP’s John Richards—which means vinyl plays a huge role in both ambiance and aesthetic. The menu of food is all plant-based, down to the house-made burgers. But since Life on Mars is a bar first, you can count on good drinks, both creative cocktails and local beer/wine.

Have sushi outdoors.

Widely considered some of the city’s best sushi, Sushi Kashiba has announced they’ve opened their beautiful Pike Place Market courtyard for summer sushi al fresco. The deal is only available on 7- and 9-piece nigiri sets, and only for lunch 11:30 a.m.-2:30 p.m. Get in before the weather turns and everyone moves back inside.

And while you’re at it? Have a lobster roll, too.

New England-style hotspot Bar Harbor is teaming up with new West Seattle smokehouse Lady Jaye (coming later this month hopefully) for two more pop-ups at the former’s South Lake Union outdoor patio. On July 7 and 21, swing by 11 a.m.-5 p.m. to eat grilled dishes and lobster rolls, accompanied by slushies and bottles of rosé.

Take in the state’s largest distillery fest.

There are plenty of opportunities to party this summer, but this is a good one: Proof is returning to Fremont Studios on July 13 (from 5:30 p.m.-9 p.m.), with dozens of distillers present to pour their wares. To combat all that booze, snack on nibbles from spots like (new Sunset Hill joint) Baker’s, Agrodolce and Acme Ice Cream. Tickets are still available—$60 for regular admission and $85 for VIP (gets you in an hour early, plus extra tasting tokens).
