Just four years ago, Edouardo Jordan, chef/owner of Salare and JuneBaby, was cooking in other chefs’ kitchens. Today—after a year involving two James Beard Awards, countless national accolades and a three-star review in The New York Times—he’s arguably the most buzzed-about chef in the country. Though we love the food at his Ravenna temple to Southern fare, JuneBaby, what we love even more is the conversation he’s started about a better understanding of Southern food’s history, better representation of black chefs and better fried chicken for everyone.
